Icelandic Adventures

The Land of Ice awaits my arrival. Or so, I hope. I have dreamt of this for a long time. I'm so beyond excited to explore, yet another country. In just 11 short days, I will be getting on the plane, to depart for Iceland. I have so many things on my list that I would love to see, but so little time. With only 7 full days there, I'm torn to have to pick and choose which places I will have to miss this time. This trip is filled with exciting activities I've never done. I will be talking about each activity in a separate post after I experience it.  Iceland offers some of the most spectacular sceneries: endless waterfalls, volcanos, icebergs, farm houses, natural lagoons/hot-springs, ice caves just to name a few.  I’m also excited for the weather change. Steven's Creek Trail

If there is one word that I can use to describe myself, it would definitely be an explorer! I'd love to explore a lot more than I get to, but I guess this thing called life, requires some balancing. Not too long ago I finally went on a hike, that I've been planning on going since I moved to Northern California almost a year ago! It's called Steven's Trail, about 50  minutes east of Sacramento.   I use AllTrail app on my  iPhone to find hikes, and this particular one was marked as  an 'easy' hike, despite it being 9 miles. I figured, perhaps it's just a nice little walk along a creek. Thank God I packed a small snack and a full camelbak of water! I mean, I know I haven't hiked in a while, but this, by no means was an easy hike. The elevation, the hills, the ups and downs, the rocks and its 9 miles! I don't know which pro graded that hike, but I would definitely give it at least a moderate difficulty. Nonetheless, It was a good morning exercise. I fel...

Bucket List Things...

Last summer I was fortunate enough to take a 3 month trip to Europe. It was surreal, I honestly didn't even have it on my bucket list. But some of the activities we did, were definitely checked off. Doing something that is written on my bucket list in real life, gives me an unbelievable satisfaction. On top of that awesome feeling, I also get motivated to achieve the next thing on my list. My list is endless! There is SO much I want to accomplish!  Today I want to share my experience doing something that has been on my list for a long time: White River Rafting! I have always wanted to do it but it never worked out, until last weekend. This time it worked out so perfect, it was worth the wait!  We were lucky to get a private tour guide who was the coolest dude, ever! He has been rafting for over 40 years, so his experience was unbeatable and it showed when we started rafting.  Our 10 mile trip took us over 6 hours because our tour guide made sure that we woul...

Journey to Europe.

I'm in single digits before I leave for Europe for 86 days. 86 days to visit as many places as I can. Time is ticking toooooo fast! I haven't even started packing. I depart on June 4th 2014. I will also upload blogs when I can, but that might not happen till I'm done with my travels.  Just to give you a sneak peek on my projected plan, I plan to visit 16 countries: SWEDEN UK IRELAND SWITZERLAND ITALY CROATIA AUSTRIA CZECH REPUBLIC GREECE GERMANY NETHERLANDS BELGIUM SPAIN FRANCE FINLAND ESTONIA And that will complete my list. I call it the Koala Cocktail...

This will be a very short straight to point blog, about one thing only. I'm in the middle of finals, hopefully about to graduate...Therefore I don't have much time to blog. But I really, really wanted to share this with you. Recently I started expanding my taste buds and trying out new drinks.  Normally I like to have a beer or a glass of champagne, but both are pretty high carbonated and make me bloated. So when I'm at the pool that's a NO NO! So I decided to come up with my own cocktail, with ingredients that I love. In addition these ingredients are very refreshing.  So here it is: The Koala Cocktail : Muddle mint in the shaker,  Add ice.  1 oz of cucumber vodka (or regular vodka works too) 1/2 oz of St Germain Liqueur  Shake! Shake! Shake! Pour that beautiful creation in a martini glass Drum Rolls please!  Top off with Champagne! Wait! Another Drum Roll! Garnish with a few slices of baby cucumbers This is one refreshing, delicious...

Energy tips by Lala Koala

Ever feel like you need 3 cups of coffee just to get through a simple day at work/school? I do!  Recently I decided I will try to drink less coffee and try to find energy through consuming healthier products like fruits and veggies. Here are a few energy drinks you can consume without feeling guilty:  The first one is called yellow energy: 1-2 oranges, 1 piece of ginger, handful of pineapples. Add a little bot of ice and low-fat yogurt. I add flavored low-fat yogurt. Koala's energy flow: Handful of watermelon, 1 1/2 cups of blueberries, 1 apple, 2-4 strawberries, a handful of blueberries half of a tangerine. Again ice and low-fat yogurt, I used peach low-fat yogurt. Green Madness: Take the energy-packing power of leafy greens, greek yogurt, apples and bananas, and combine it with any other fruits you like, and you've got a wake-up call in a glass. Getaway... by Lala Koala

With my schedule being so busy any time I have any kind of free time I like to go to the beach, clear my head, relax, tan, listen to the waves and absolutely always must have lunch or a drink at a restaurant that over looks the water. Nothing satisfies me more than a magnificent view. Just yesterday I had some free time, so I decided to go to Laguna Beach. I absolutely love that place. It's so relaxing and pretty. Art galleries, gorgeous beach, perfect water and of course great restaurants! For lunch I went to this place called The Cliff. I only had their clam chowder, which was really good. One day I hope to live there. A few cool places to go in Laguna are: Thousand Steps, Treasure Island, Crystal Cove, Forest, and of course there are a ton of art galleries everywhere....

Sometimes I surf the web for nothing but cool stuff.

This is a perfect get away spot in my mind. The waterfall completes this perfect design with a refreshing touch. It looks amazing, and I would be one lucky person if I ever got a chance to visit a spot like this! This is one lucky dog! How cool is this dog palace?! I have a little dog and she would looove those stairs! she loves running up and down the stairs, as I'm sure lots of other dogs love it too. I found this pictures and I fell in love with this spot. I mean why not get a pool that is as big as a whole river?! This place looks so freaking awesome! I'd love to wake up to this every morning! God, this is one amazing view! Strike it.

I wanted to share my opinion on this "holiday". I think Valentine's day is great, however I believe that there should be more of them. If you're sharing your life with someone special make every day a Valentine's Day. I don't mean buy presents or go out to eat everyday, there are plenty of ways to make your significant other see that you appreciate them. For example: if your other half wakes up to a cup of coffee, get up 5 minutes earlier and make that cup. Little things like that will take you a long way. I will blog about romance soon enough, however this post will be about Valentine's day ideas. If you don't want to go out to eat, or you are too late on making the reservations, make a meal at home. Buy some flowers, maybe a box of chocolate. Of course, you can be more original and get her something she mentioned about a while back. To date or not to date...

I missed this weekend of blogging due to my crazy schedule. My weekends are no where near the actual weekends. It always seems to be the busiest days out of the week for me.  Let me start of by saying I am about to tell you my "Carrie Bradshaw" story. If you know me, you already know my story, if you don't...Well... long story short: got dumped, had my heart shattered to a million, maybe ever three million, tiny pieces, hopeless, heartless, loveless... you get the point. Because of that I was forced to start these new discoveries of how I can make myself happy now. It's taking me a while to realize what I really want, who I really am, and who I really want to be. With these question I'm learning a lot about myself. Recently I started reading a book called "Date like a Man", the book isn't about just dating; it is about discovering the things I have been trying to about myself for the passed 3 months. We're only young...when we're young...

SO take advantage of it! Make memories. Be addicted to taking pictures because the moment will never, ever be repeated again. Don't regret what happen, learn from it. Make a better future and remember to take more pictures. It's never too many!
